Vegan Lunch Ideas

Packing your own lunch is healthier and saves you time and money!

Here are some quick, easy Vegan lunch ideas, true brown bag lunches!  No microwaves needed.  Some could use a small ice pack if it’s a hot day.  Great for adults and for school lunches!  I sent my kids to school with these lunches, served them at birthday parties and pulled them out for the family on road trips!

 

Wraps- on large Whole Wheat Tortilla or Corn Tortilla – Roll up in foil or a plastic wrap

-1st layer: your choice of hummus, lentil spread, avocado or guacamole, edamame spread or other bean spreads

-2nd layer: your choice of sliced mushrooms, dates, mandarin oranges, seeds, thin slices of pear, peppers, cucumbers, julienned carrots, tomatoes, onions, squash,

-3rd layer:  your choice of lettuce, bean sprouts, spinach, arugula, greens, watercress

Roll up tight.  Slice in half and wrap in foil or plastic wrap

 

Rolls- tighter and thinner than a wrap – on 8″ Whole Wheat Tortilla – Roll up in foil or plastic wrap

Roll #1- spread with Amy’s Black Bean Refried Beans, pieces of lettuce, salsa to your preference then roll up tight

Roll #2- spread thin layer of mustard, 3 slices imitation turkey evenly spread out, lettuce, then roll up tight

 

Burritos- like a wrap but includes rice and bean – on large Whole Wheat Tortilla or Corn Tortilla – wrap end in foil

-1st layer – brown rice, bulgur, whole wheat couscous or barley – put in the middle leaving about 2″ at one end

-2nd layer – your choice of bean

-3rd layer – your choice of lettuce, fake cheese, onions, tomatoes, salsa, verde sauce, ground soy meat, spinach, sauteed onions

Fold bottom end up then wrap sides tightly together. Place on sheet of foil and wrap bottom and sides tightly.

 

Sandwiches & Pita Pockets – on whole grain bread or pita pockets

-1st layer:  your choice of 3 slices of imitation meat, vegan tuna or chicken salad, thick layer of hummus, or a left-over veggie burger

-2nd layer:  your choice of mustard, veganaise, lettuce, tomato, vegan cheese, sprouts, spinach, sliced onion

 

Tempeh “BLT” – on whole grain bread – made with Tofurkey Marinaded Tempeh Strips

-Toast your bread then spread it with a layer of vegan mayonnaise

-Saute about 6 tempeh strips in a small amount of oil until golden brown on each side then layer evenly across your bread

-Top sandwich with a piece lettuce and a slice of tomato

-Cut in half and place into a tight Tupperware or baggy.

 

PBJ — Good old-fashioned pbj on whole wheat bread

 

Add some carrot and celery sticks or fresh fruit and some water and you have a complete meal!
